El té rojo de China Pu Erh, también es conocido como “té de los emperadores”, pues en tiempos remotos su degustación estaba reservada a ellos. Es originario de las zonas montañosas de la provincia China de Yunnan, en el sudeste de China, una zona con clima templado donde todavía no ha llegado la contaminación industrial.
El árbol de té del que se extrae el Pu Erh, se supone originario de las montañas de Yunnan. Posee hojas extraordinariamente grandes, ovales y alargadas que acaban en punta. Está clasificado en la familia de la “Camellia assamica” y se le denomina “árbol de té Quingmao” pues crece hasta convertirse en árbol, al contrario que la planta de té conocida como “Camellia Sinesis” que solo forma un arbusto.
Los especialistas clasifican el té Pu Erh como post-fermentado, pues pasa por un proceso de maduración posterior a la fermentación, donde, bajo condiciones controladas, unas cepas bacterianas específicas actúan sobre él. Este proceso puede durar hasta 60 años en el caso de los tés más valiosos, para desarrollar su aroma incomparable. Por su color rojizo oscuro, se le denomina té rojo. Además, desarrolla un aroma terroso, casi de humo, que no se puede comparar a ninguna otra clase de té
En la actualidad, el proceso de producción del té Pu Erh es muy similar al realizado en China hace 2000 años. Las hojas del Pu Erh pasan por los siguientes procesos:
- Marchitado: se deja secar para reducir la humedad de la hoja.
- Enrollado: sirve para que la savia de las células entre en contacto con el oxígeno del aire.
- Fermentación: se lleva a cabo en un entorno húmedo para que la savia de las células, que se oxida con el oxígeno, comience a fermentar: comienza a degradarse por la acción de enzimas y microorganismos.
- Secado: cuando la hoja adquiere el color adecuado (pardo rojizo) se interrumpe la fermentación y se procede a secar las hojas con aire caliente.
- Cribado/selección: se procede al proceso de selección de hojas, según su espesor. A mayor groso, más calidad.
El uso de este té está profundamente arraigado en la antigua sabiduría de la medicina tradicional china donde es considerado como el mejor remedio para gozar de buena salud.
